So sorry I have been missing for a few weeks! It has been a super busy June so far!

I went on a mother-daughter getaway the first few days. It was so nice to spend time with my mom. I am truly thankful for her role and friendship in my life.

I was only home for one night before hopping on a plane and heading to Haiti.

Just like the many trips before, this trip was a blessing. There is something about this country that stirs my soul. And I am so thankful for the precious friendships I have there.

I unfortunately did contract chikungunya virus from the mosquitoes in Haiti. It was not fun! UGH!

I am starting to feel better today.. but have a lot to catch up on. I look forward to posting again next week sometime! Talk soon 🙂

places i love: the apparent project, haiti

We had the opportunity to visit The Apparent Project during this trip to Haiti. It’s located in Port Au Prince.

I not only fell in love with their amazing artwork and products, but the idea behind the project.

Here’s the story (I copied it from their website)…

In Haiti, poverty and the legacy of slavery have caused a staggering culture of child abandonment and male neglect of family commitments. 70% of labor aged Haitians are unemployed, while those who are employed earn an average annual wage of $400. Mothers give up their children, and men leave their wives and lovers because of the stress of trying to provide from within a devastated economy. There is a strong cycle of fatherlessness and neglect that probably stems from the severance of slaves from their African families and from the commodification of children by slave traders. Whatever the forces are that have made fracture and dislocation the norm for Haitian families, it is poverty that maintains this status quo.

Unfortunately, orphanages have often only enabled this dissolution of Haitian families. Haiti was said to have as many as 500,000 orphans before the devastating earthquake of January 12, 2010. The vast majority of these “orphans” were actually not true orphans. They were children given up by living parents because of extreme poverty. A history of corruption and inefficiency in the Haitian governments adoption processes has caused orphanages to be overcrowded and short on funding, also creating emotional, physical, and developmental problems for institutionalized children. The instances of Reactive Attachment Disorder within Haitian orphans is astounding. Yet, while a single adoption costs $15,000-20,000, these funds could sustain up to 40 families by providing seed money for ongoing small businesses! Something needs to change.

Most orphanages are focused primarily on childcare, without addressing the roots of child abandonment. Unfortunately, many, many orphanages also take in way too many kids way too easily. While the Apparent Project advocates passionately for the adoption of true orphans we also believe that preventing child abanonment by economically empowering Haitian families is the best way to rescue children. This is why we have created opportunities for impoverished parents to earn an income through our artisan program. We train each parent in a specialized skill, such as jewelry making, bookbinding, sewing, or another craft, building relationships along the way. Through addressing educational needs, homelessness, joblessness, nutritional problems, medical needs, and building emotionally and spiritually enriching relationships, we are trying to bring dignity and wholeness to the whole person, strengthening each to be a support and encouragement to others.

This is why we are called the “Apparent Project”. We are trying to help mothers and fathers in poverty be A PARENT to their children. We are educating and taking care of street kids who don’t have A PARENT. We are using media and the arts to make the needs of Haiti APPARENT to those who can help, and we are doing this all with the hope that the love of God will be made more APPARENT to those we humbly serve and that He will be known as A PARENT to the parentless.”

items needed for haiti

So in just two weeks from today, I will be in one of my favorite countries, Haiti.

I will be honest, Haiti and I tend to have a bit of a love, hate relationship. But, one thing is guaranteed each time I go, I never come back the same.

Luke and I have been able to build some precious relationships there. We really can’t wait to see everyone!

places i love: bennys on the beach

We love to go to the beach.

For me, it’s a place that has always made me feel alive. There’s just something about it… the ocean waves, the warm sand, and the tingly feeling you get when the sun hits your skin.. it is invigorating.

One of our favorite places to go the beach is the Lake Worth Pier.

And what’s better than a day at the beach? Starting it off with a yummy breakfast. That’s where Benny’s comes in. Yum!

Let me tell you, this place is delicious and you can’t beat the location.

I have so many great memories here. If you are local, you must go and try it out. Their lunch menu is also great.

places i love: costa rica

This truly is one of my favorite places to be on the planet. This was my 5th time to Costa Rica, and just like all of the times before I fell in love.

The food, the people, the beauty, and the experience… always life-changing.

My hubby Luke and I were able to help lead a group of high school seniors from Berean Christian School (which, let me stop and mention, how awesome is it that Berean offers these trips for students?).

I couldn’t have been more proud of this group of teenagers. They worked their tales off and built a house for a family in need in just three short days. Incredible! (We worked in partnership with Joshua Expeditions and YWAM’s Homes for Hope)

Not only that, we were able to put on a VBS for the children in that particular area we were doing ministry in.

I also had the privilege of making some new friends on this trip. Stay tuned to the blog in the coming weeks for a Q & A with Paola, a local missionary in Costa Rica who has an organization that works with girls and boys involved in sex trafficking and prostitution.

And in honor of yummy Costa Rican cuisine… a little “How To” for you as well!

Sweet Plantains 

What you will need:

2-4 Plantains (the darker in color the peel, the sweeter they will be)

Agave Nectar

Coconut Oil

Himalayan Sea Salt

Directions:

Peel and cut plantains like below…

In frying pan heat 1 tablespoon of coconut per plantain (so I did two, so put in two). And 1 teaspoon of Agave.

Cook plantains to preference. I like them to be caramelized on the outside and soft in the middle.

When done, put a tiny bit of salt on the top (gives it a yummy sweet and salty flavor).

Serve as a side dish. I served them the other night with Egg Torillas and Guacamole.

heading to costa rica

This weekend I get to leave to visit one of my favorite countries in the world, Costa Rica.

The views, the food, and the people are all so special to me. This is my fifth trip and it never gets old!

Please pray for my hubby and me as we lead 40 High School Seniors on this trip.

I am so excited!

We get to do a VBS with the Costa Rican children and also build a house for a family in need while we are there.  How awesome is that? Build a HOUSE!

Please pray for the work we are doing and also for our hearts to change and grow closer to the Lord.

places I love: belle glade

Belle Glade. We have a bit of a love-hate relationship.

Google it and you may see it’s not the easiest place to grow up. But, there are some precious kids there that I love like crazy.

My first experience in Belle Glade was going in 7th grade to help stock a food kitchen. The name of that food kitchen was Lighthouse Cafe. I remember sitting outside this green apartment building playing dominoes with some of the older Haitian men there. In the years to follow, I went  a couple times a year for different projects or outreach events.

But, it wasn’t until 2008 that I really fell in love with this town. I started to go out weekly with a program called Revolution. I actually help teach a Hip Hop class.. haha! It was such a blast. And more importantly, it was really special to be able to get to know the children and spend time with them consistently.

A few programs have come and gone since then… but I have been able to maintain a relationship with some of these girls since they were in Kindergarten! They are now in 6th grade (hard to believe).

The past year we have been using the Lighthouse Cafe (the same place I first went to) to meet after school on Wednesdays. We work on homework together, play games, talk about boys, and learn about Jesus. It is truly one of the highlights of my week.

Currently I have 4-7 girls coming out each week. And there are more girls that want to come… but I need help.

I would LOVE to have a few other ladies (16 years or up) come out with me each week. These girls just need friends, mentors, someone who can consistently show them they matter and Jesus loves them.
